Sambhar is one of the lip-smacking delicacies of South India and inevitable part of Onasadya. Sambhar is a wholesome south Indian dal. It is a concoction of spices, lentils and veggies making it complete meal on its own. Every housewife has a secret formula of her own.
The origin of this dish is uncertain, though according to some legends, it was originated in the kitchen of Thanjavur Marathas during the 18th century in the South- Indian state of Tamil Nadu.

Drumstick leaves used in Sambhar are of great value as a source of carotene, calcium phosphorus and vitamin C. Drumstick leaves contain 38% proteins, all amino acids making it rich source of protein compared to other vegetables. Carbs of uttapum or masala dosa is balanced by the veggies and protein contained in the sambhar.
