A savory blend of spices and herbs which complements grilled boiled or stir fried vegetables
Vegetable rub is a versatile combination of spices and herbs that is wonderful with seafood, in butter or mayonnaise as a sauce for seafood, or for vegetables or any dish for which want a spice mix with a bit of a kick. In this rub ground cumin, coriander, mustard seeds, pepper and sea salt are tossed together. Rub vegetables generously with the mixture, then grill, keeping them away from the hottest part of the flame, until tender.
To apply vegetable rub, sprinkle over the vegetable and then gently massage in the seasonings to make sure they adhere. As a general rule, use about 1 tablespoon of rub per portion of cut vegetable. Although rubs can be applied right before cooking, the flavor of the spices penetrates deeper into the vegetable if given time. Refrigerate rubbed vegetables for at least an hour to maximize the return.
