Bajra is grown in India since prehistoric times. It is a basic staple food for households among the poorest people. Bajra is ground into flour to make rotis or is coarsely crushed to make porridge like khichdi that is eaten with dollops of ghee or sesame oil in the cold desert winters. Along with the mandatory ghee or sesame oil, pickles, curds, papad and gur also accompany this khichdi. It is Rajasthan on plate. Delicately spiced robust bajra makes this a delicious dish.
